Preparation
Heat the oven to 400 F. In a large bowl put eggs, yolks and sugar.
Put the bowl on the fire in a water bath, without touching the water and beat with a hand mixer , until the temperature of the eggs reaches 110 F.
Remove from the heat and continue beating until it doubles its volume and at that moment add the flour little by little.
Put the pasta in a baking tray with a non-stick base and previously greased and floured.
Bake 10 to 15 minutes until lightly browned. Remove from the oven and cool.
Once cool sprinkle with icing sugar and flip over a waxed paper. Cover with the jam and roll with the aid of the paper.
You can cut the slices of the edges so you have more beautiful presentation. Sprinkle with icing sugar.
