Jelly Eyes

This is a delicious homemade cookie, easy to prepare, it can vary in flavors since it uses the jam you like best. They are perfect for any occasion and great companions for a good cup of coffee.

  • 3 cups flour
  • 3 teaspoons baking powder
  • 2 grams salt
  • 1/2 cups sugar
  • 1 tablespoon honey
  • 220 grams butter
  • 2 eggs
  • 1/2 cups jam, flavor of your choice
  • 200 grams icing sugar, for decoration

  • Preheat the oven to 160°C
  • Sift the flour, salt, and baking powder, set aside.
  • Cream the butter with the honey and sugar until a homogeneous mixture forms.
  • Place this preparation in the center of the flour along with the eggs.
  • Combine these ingredients with the flour to form a soft dough, without over-kneading, just mix until a ball forms.
  • Divide the dough into two portions and shape each into a cylinder four cm in diameter.
  • Refrigerate, let it rest and the dough harden a bit for at least 30 min.
  • Cut into slices one centimeter thick and arrange on clean baking sheets.
  • Make a hole in the center and fill with jam.
  • With the preheated oven, bake for 12-15 minutes.
  • Remove and let cool on a wire rack, dust with powdered sugar.
