In a medium deep bowl, combine the water, yeast, and 1 tablespoon of sugar. Let it react for 5 minutes.
In a large deep bowl, put the flour and in the center add the eggs, the yeast mixture, the sugar, the butter, the nutmeg, and the salt.
On a clean surface, knead the dough until well integrated and somewhat fluffy.
Place in a greased container and cover. Let the dough rise for 1.5 hours.
On a clean surface, roll out the dough until it is 1cm thick and use a cookie cutter to cut out circles. (approx. 20 circles).
Bring the oil to a boil for 5 minutes or until its temperature reaches 200 degrees Celsius.
Using a spoon, drop 3 circles of dough and let them brown for 40 seconds on each side. Remove from the oil and place on paper towels. Repeat with all the donuts.
Using a piping bag, fill the donuts with raspberry jelly.
