Easy Piña Colada Gelatin

  • 1 envelope pineapple gelatin, (25 g)
  • 4 cups water, hot
  • 6 slices canned pineapple
  • 1/3 cups maraschino cherries
  • 2 cups coconut cream
  • 1 cup condensed milk
  • 1 cup evaporated milk
  • 1/2 cups table cream
  • 2 cups Philadelphia® cream cheese
  • 5 envelopes unflavored gelatin powder, (7 g each) hydrated and melted

  • Dissolve the pineapple gelatin in hot water and pour one quarter into a gelatin mold, refrigerate until set.
  • Remove from the refrigerator, place the pineapple slices and cherries in the center, cover with more pineapple gelatin and refrigerate until set.
  • For the cream gelatin, blend the coconut cream with the condensed milk, evaporated milk, half-and-half, Philadelphia® cheese, and melted gelatin. Pour over the pineapple gelatin and refrigerate until completely set, unmold, and serve.
