Dissolve the pineapple gelatin in hot water and pour one quarter into a gelatin mold, refrigerate until set.
Remove from the refrigerator, place the pineapple slices and cherries in the center, cover with more pineapple gelatin and refrigerate until set.
For the cream gelatin, blend the coconut cream with the condensed milk, evaporated milk, half-and-half, Philadelphia® cheese, and melted gelatin. Pour over the pineapple gelatin and refrigerate until completely set, unmold, and serve.
