Coconut Gelatin with Red Fruits

This dessert is simple and easy to prepare, and it also works as a light snack or to impress at any gathering with friends or family. It is made with coconut water and natural fruits, and you can add any seasonal fruit you want to this gelatin recipe. As a tip, you can place the gelatin in the freezer for a few minutes to speed up the setting process.

  • 2 boxes coconut water, Nature's Heart® 330 ml each
  • 1/4 cups shredded coconut, for the coconut gelatin
  • 4 envelopes unflavored gelatin powder, hydrated and melted for the coconut gelatin
  • 1/2 cups cranberries, Nature's Heart® to accompany
  • 1/2 cups strawberries, in cubes to accompany
  • 1/2 cups blueberry, to accompany
  • 1/2 cups raspberries, in halves to accompany
  • shredded coconut, toasted coconut for decoration

  • For the coconut gelatin, blend Nature's Heart® coconut water, shredded coconut, and gelatin until completely mixed. Set aside.
  • In small molds, pour the coconut gelatin to ¼ of the mold and refrigerate until set. Once solid, place the Nature's Heart® blueberries, strawberry, blueberry, raspberry, and pour the rest of the coconut gelatin, refrigerate again until set.
  • Serve on a plate, decorate with toasted coconut, and enjoy.
