Strawberry and Mango Gelatin with Chamoy

  • 1/2 cups chamoy, for the strawberry gelatin
  • 3 cups water, for the strawberry gelatin
  • 35 grams unflavored gelatin powder, or 5 packets (1 packet = 7g) hydrated and melted, for the strawberry gelatin

  • For the mango gelatin: Blend the mango with the sugar and water at medium speed for about 2 minutes, until the ingredients are well integrated. Then, while still blending, gradually pour in the hydrated and melted gelatin, continue for one minute and set aside.
  • Strain and pour the mango mixture into a ring-shaped gelatin mold previously greased with a bit of cooking spray. Refrigerate until set.
  • For the strawberry gelatin: Blend the strawberry with the sugar, liquid chamoy, and water at medium speed for about 2 minutes, until the ingredients are well integrated. Then, while still blending, gradually pour in the hydrated and melted gelatin, continue blending until the ingredients are fully combined.
  • Strain and pour the strawberry mixture over the already set mango gelatin, strain well to avoid pouring the foam that forms from the ingredient integration. Refrigerate the strawberry and mango gelatin again until set.
  • Unmold the strawberry and mango gelatin with chamoy on a round plate, decorate with chili gummies in the center, mango, and strawberry around, and drizzle with chamoy to taste.
