Hydrate the gelatin in 3 tablespoons of cold water. In a medium saucepan, pour the Whole Milk Santa Clara® and the sugar without letting it boil.
Melt the gelatin in the microwave and add it to the saucepan. Place the Guava Yogurt Santa Clara® in a bowl and gradually add the Whole Milk Santa Clara® mixture while mixing continuously. You can strain the preparation or leave it as is.
Let it sit for 10 minutes to remove the bubbles that formed while whisking, pour the mixture into glasses or glass cups and refrigerate for about 4 hours or overnight.
For the baked figs, place the figs and walnuts on a baking sheet lined with parchment paper, drizzle honey over the figs and walnuts, and bake at 180°C for 30 minutes. Remove from the oven and let cool completely.
Decorate the panna cotta glasses with the figs and walnuts, garnish with a mint leaf.
