Guava Panna Cotta with Figs

  • 250 grams guava yogurt Santa Clara®
  • 300 milliliters Santa Clara® whole milk
  • 50 grams sugar
  • 1 tablespoon unflavored gelatin powder
  • 1 teaspoon vanilla essence
  • 1 cup fig
  • 1 tablespoon honey
  • 1 tablespoon walnuts
  • 1 tablespoon orange zest

  • Hydrate the gelatin in 3 tablespoons of cold water. In a medium saucepan, pour the Whole Milk Santa Clara® and the sugar without letting it boil.
  • Melt the gelatin in the microwave and add it to the saucepan. Place the Guava Yogurt Santa Clara® in a bowl and gradually add the Whole Milk Santa Clara® mixture while mixing continuously. You can strain the preparation or leave it as is.
  • Let it sit for 10 minutes to remove the bubbles that formed while whisking, pour the mixture into glasses or glass cups and refrigerate for about 4 hours or overnight.
  • For the baked figs, place the figs and walnuts on a baking sheet lined with parchment paper, drizzle honey over the figs and walnuts, and bake at 180°C for 30 minutes. Remove from the oven and let cool completely.
  • Decorate the panna cotta glasses with the figs and walnuts, garnish with a mint leaf.
