Lactose-Free Rice Pudding Flan

  • 1 liter Ades® soy milk, for the rice pudding
  • 1 1/2 cups rice, for the rice pudding
  • 1 stick cinnamon, for the rice pudding
  • 1 tablespoon vanilla essence, for the rice pudding
  • 1 lemon, for the rice pudding
  • 1 cup granulated sugar
  • 4 eggs, for the flan
  • 2 cups Ades® soy milk, for the flan
  • 1 cup sugar, for the flan
  • 1 tablespoon vanilla essence, for the flan
  • raspberries, for decoration
  • peppermint, for decoration
  • almonds, sliced, for decoration

  • Preheat the oven to 180°C.
  • For the rice pudding, heat the AdeS® Soya with the rice, cinnamon, vanilla essence, and zest. Cook over medium heat for 20 minutes or until the rice is cooked. Let cool and set aside.
  • For the flan, heat the sugar over medium heat until it turns into caramel, pour into individual molds or a 20 cm diameter flan mold. Let it set.
  • Blend the egg with AdeS® Soya, sugar, vanilla essence, and rice pudding until you obtain a very smooth and homogeneous mixture.
  • Pour into the molds with caramel and cover with aluminum foil. Bake in a water bath until cooked, about 40 minutes.
  • Remove from the oven, cool, and unmold. Refrigerate before serving and decorate with raspberries, mint, and almonds.
