Lemon and Almond Soufflé

  • 6 tablespoons rice flour
  • 1 1/4 cups whole milk, warm

  • Grease the soufflé molds with butter using a brush and with vertical and upward movements.
  • Cover the mold with sugar, ensuring that the bottom and sides have enough sweetness, then remove the excess. Set aside.
  • Preheat the oven to 190 °C.
  • Mix the egg yolks with the lemon juice and sugar, whisking with a balloon whisk until the yolks begin to whiten; gradually incorporate the rice flour and warm milk, whisking continuously. Place the mixture in a small pot over low heat, cooking until the consistency becomes thick while stirring continuously. Remove from heat, place in a bowl, and let cool. Set aside.
  • Chop the almonds into small pieces. Once the previous mixture is cool, gently fold in the almonds and lemon zest. Set aside.
  • Place the egg whites and salt in a bowl and, using a mixer, whisk until they turn a whitish color; gradually add the sugar until the consistency is fluffy and peaks form.
  • Add the egg whites to the almond mixture gradually and gently to incorporate enough air into the mixture. Then pour the batter into the greased soufflé molds, removing the excess with a spatula and smoothing the surface. Bake on a baking sheet at 190 °C for 25 minutes, or until golden and fluffy.
  • Serve hot, decorate with powdered sugar, almonds, and mint leaves.
