Lemon Cake with Poppy Seeds

This cake is lemon flavored and contains poppy seeds. It tastes delicious when accompanied by berries like blackberries and raspberries with a touch of whipped cream.

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon lime zest
  • 1/4 teaspoons salt
  • 1 cup unsalted butter, at room temperature
  • 3/4 cups sugar
  • 2 eggs
  • 2 tablespoons poppy seed
  • 1 1/2 cups icing sugar, optional for decoration
  • 3 tablespoons lemon juice

  • Preheat the oven to 180 degrees with the rack in the center of the oven.
  • Grease a small cake pan.
  • In a bowl, mix the flour, baking powder, lemon zest, and salt.
  • With an electric mixer, cream the butter with the sugar until it is fluffy and smooth, about 2-3 minutes.
  • Add the eggs and mix.
  • Lower the speed of the mixer and add the flour mixture and poppy seeds. Beat only until combined.
  • Pour into the previously greased pan and bake for 30 minutes until golden.
  • If desired, to glaze, mix lemon juice with powdered sugar in a deep plate and stir until smooth. Place the cake on a rack and cover with the glaze. Let it cool for about 15 minutes to harden.
