Lemon Glazed Loaf

This lemon loaf has a sweet lemon glaze and is very easy to prepare.

  • 2 sticks unsalted butter, at room temperature
  • 3 cups flour
  • 3/4 cups cow's milk, with a few drops of lemon
  • lime zest, of 2 lemons
  • 1 cup lime juice
  • 1 1/2 teaspoons salt
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 2 cups sugar
  • 5 eggs
  • 2 cups icing sugar
  • 3 tablespoons lime juice, for the glaze

  • Preheat the oven to 180 degrees with the rack in the lower part of the oven.
  • Grease and flour 2 elongated loaf pans.
  • Add a few drops of lemon to the milk and mix with the rest of the lemon juice and zest.
  • In a bowl, mix the flour, salt, baking powder, and baking soda.
  • With an electric mixer, cream the butter at medium speed.
  • Add the sugar to the butter and beat until fluffy.
  • Add the eggs one at a time, beating until everything is incorporated.
  • Reduce the speed to low and add the flour mixture in three parts, alternating with the milk (starting and ending with the flour).
  • Quickly beat until everything is incorporated (do not overbeat).
  • Divide the mixture between the two greased and floured pans.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out dry.
  • Let cool for 15 minutes in the pan.
  • Unmold and let cool completely.
  • Prepare the glaze: put the powdered sugar in a bowl and add 3 tablespoons of lemon juice, stir well with a whisk. Add more lemon juice if necessary.
  • Place the loaves on a rack and pour the glaze on top.
  • Let it harden for 30 minutes.
