Lemon Mug Cake

  • 1 San Juan® egg
  • 2 teaspoons lime juice
  • 1/2 teaspoons vegetable oil
  • 1 teaspoon lime zest
  • 3 tablespoons flour
  • 1/4 tablespoons baking powder
  • 1 tablespoon sugar
  • 3/4 cups flour, 160 g, for the French meringue
  • 1 pinch salt
  • 1 cup sugar
  • lime, for decorating

  • Spray the mug with cooking spray, add the San Juan® Egg, lemon juice, vegetable oil, lemon zest, and mix with a fork, then add the flour, baking powder, sugar, and mix until you have a homogeneous consistency.
  • Place in the microwave and cook for 1 minute and a half. Let it rest for 20 seconds inside the microwave before opening.
  • For the French meringue, beat the San Juan® Egg Whites with a pinch of salt, and gradually add the sugar in a rain-like manner until you see the meringue change color and have a firm and shiny consistency.
  • Decorate the mug cake with the meringue, flambé, and garnish with lemon.
