Lemon Pudding

  • 7 pieces of bread, stale, cut into cubes
  • 2 cups cow's milk
  • 1/2 cups sugar
  • 5 eggs
  • 1 teaspoon vanilla essence
  • 90 grams butter, melted
  • 1/4 cups lime juice
  • 2 limes, only the zest
  • 1 cup icing sugar, for the glaze
  • 4 tablespoons lime juice, for the glaze

  • Preheat the oven to 180° C.
  • For the pudding, place the bread in a bowl and soak with the milk for 10 minutes or until the bread is completely soaked.
  • Add the sugar, egg, vanilla essence, butter, lemon juice, and lemon zest, mix until combined.
  • Pour into a previously floured and greased mold, bake for 35 minutes, let cool, and set aside.
  • For the glaze, mix the sugar with the lemon juice.
  • Pour the glaze over the pudding, let it dry for 5 minutes, and decorate with lemon zest.
  • Serve accompanied by a cup of coffee.
