Lemon Pumpkin Bread

This is a delicious pumpkin bread with a moist, soft, and fluffy texture inside, covered with a rich sugar glaze and a touch of lemon that makes it extremely special.

  • 1/2 cups granulated sugar
  • 1/4 cups raw sugar
  • 1 cup flour
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1/2 teaspoons cinnamon powder
  • 1 egg
  • 3/4 cups pumpkin purée
  • 1 tablespoon lime zest
  • 1/3 cups vegetable oil
  • 1/2 cups icing sugar, for decoration
  • 3 tablespoons lime juice, for decoration
  • 1 tablespoon lime zest, for decoration

  • Preheat the oven to 180°C (350°F). Grease and flour a loaf pan.
  • In a bowl, mix all the dry ingredients.
  • With the help of an electric mixer, beat the pumpkin puree with the egg and add the zest. Gradually add the dry ingredients alternating with the oil.
  • Pour the mixture into the mold and bake for about 40 minutes or until cooked. Cool and unmold.
  • For the glaze, mix the powdered sugar with the lemon juice in a bowl until combined. It should have a thick consistency.
  • Cover the bread with the glaze and decorate with the lemon zest.
