1/4 teaspoons salt
1/4 cups canola oil
1 cup wheat flour
1 cup ricotta cheese, low-fat
3 tablespoons icing sugar
1 teaspoon lime zest
1/2 teaspoons cinnamon
1 1/2 cups strawberries

In a medium bowl, beat the eggs until smooth. Add the milk, salt, oil, and flour. Beat well until it looks like a light pancake batter.
Heat one tablespoon of oil in a non-stick skillet.
Pour 3 tablespoons of the mixture into the skillet and immediately tilt and rotate it to spread the mixture evenly.
Cook until the edges turn brown and the top feels firm to the touch.
Loosen the edges and flip the crepe. Cook for another 15 to 20 seconds and remove from heat. Repeat this process for the remaining crepes.
To keep the crepes warm, cover them with a plate on top and a kitchen towel.
Combine the ricotta cheese, sugar, lemon zest, and cinnamon in a medium bowl and mix well.
On a flat surface, place one crepe and spread one tablespoon of cheese filling and finally 2 tablespoons of strawberries and fold into quarters.
