Lemon Light Cheesecake

Cold cheesecake without baking and low in calories, since no sugar is used in the recipe and reduced-fat products are used. Make this dessert so you can eat something sweet without guilt.

  • 1 package María cookies
  • 1 stick butter
  • 2 packages low-fat cream cheese
  • 14 grams unflavored gelatin
  • 200 milliliters water, boiling
  • 200 milliliters water, frost
  • 3 tablespoons lime juice
  • 4 tablespoons lime zest
  • 4 teaspoons monk fruit

  • Base: Crush Maria cookies until obtaining a fine powder, then add the light margarine bar that can be melted in the previous microwave, mix well with the cookie and with it, pour it into the mold to be used by pressing to give it shape and leave compact.
  • Refrigerate for about 20 minutes to harden.
  • Filling: With the boiling water, the unflavored gelatin is dissolved and then the ice water is poured into it.
  • This mixture then joins the cream cheese and lemon juice, the zest and the sweetener; beating by hand until the mixture is smooth,
  • Pour the mixture into the hardened base and refrigerate for about 20 minutes to harden. Decoration to taste.
