Light Nut Cookies

Prepare these Light Nut Cookies in advance to enjoy as a snack between meals; they are ideal for people on a diet or looking to maintain a healthy diet.

  • 2 sticks unsalted butter
  • 2 1/4 cups icing sugar
  • 1/4 cups corn syrup, Karo
  • 1 1/4 cups flour
  • 1 1/4 cups walnuts, can be chopped almonds or macadamia nuts

  • Preheat the oven to 180 degrees Celsius.
  • In an electric mixer with the dough hook, mix the butter and sugar until you have a fluffy mixture.
  • Add the Karo syrup and continue mixing. Then add the flour and nuts and mix until you have a uniform dough.
  • On a large sheet of wax paper, place the dough and form an elongated cylinder covered with the wax paper using your hands. Refrigerate for at least 30 minutes.
  • Prepare two baking sheets with a layer of wax paper.
  • Remove the dough from the refrigerator and with a knife cut the cylinder into cookies 1 cm wide and place them on the baking sheets.
  • Bake for 15 minutes or until the cookies are golden. Remove from the oven and allow to cool before serving.
