Easy and delicious peanut butter cookies with jam in the center, very quick to prepare! They are ideal for a low-carb diet as they only have 7 grams of carbohydrates.
3/4 cups artificial sweetener, Splenda for cooking
1 egg
1 teaspoon vanilla essence
1 cup peanut butter
1 teaspoon baking soda
1/4 cups unsweetened red fruit jam

Preheat the oven to 350 F (180 C)
Mix the sugar, egg, and vanilla extract with a mixer on low speed for 3 minutes.
Add the peanut butter and baking soda. Mix on medium speed until a paste forms, about 30 seconds.
Form 24 balls (2 teaspoons each) of the dough and place them on a greased baking sheet. Space them about 2 cm apart. With your thumb, press the dough balls to create a hollow. Fill the hollow with 1/2 teaspoon of jam.
Bake until golden brown, about 12-14 minutes. Transfer to a wire rack and let cool before eating.
