This cheesecake is a delicious and fun version of a classic dessert, with a foolproof combination of vanilla and chocolate, and a crunchy and unexpected touch of m&m’s® in the center. It is prepared all cold, making it very easy to make.
1 1/2 cups cream cheese, low-fat, at room temperature, for the vanilla cheesecake
1/2 cups icing sugar, for the vanilla cheesecake
1 tablespoon vanilla essence, for the vanilla cheesecake
1/2 teaspoons lime zest, for the vanilla cheesecake
1/2 cups low-fat sour cream, for the vanilla cheesecake
1 cup m & m's® milk chocolate
1 1/2 cups semisweet chocolate, finely chopped, for the chocolate mousse
1 cup whipping cream, warm, for the chocolate mousse
whipped cream, to cover the cake
rainbow sprinkles, in the shape of confetti, for decoration
m&m´s, for decoration

In a bowl, mix the crushed cookies with the melted butter; then press the mixture into a round mold of about 25 cm and chill.
For the vanilla cheesecake, using a mixer or hand whisk, mix the cream cheese with the powdered sugar, vanilla extract, lemon zest, and sour cream; once you have a homogeneous mixture, pour it over the cookie crust and chill for 1 hour.
Spread a layer of milk chocolate m&m’s® over the vanilla cheesecake and set aside.
For the chocolate mousse, mix the warm heavy cream and the semisweet chocolate until completely melted; chill in the refrigerator and then whip with a mixer until the chocolate cream is fluffy and creamy.
Add the mousse to the mold and chill again for at least 30 minutes.
Unmold and cover with whipped cream, decorate with sugar confetti and m&m’s®.
