M&m’s Cheesecake

This cheesecake is a delicious and fun version of a classic dessert, with a foolproof combination of vanilla and chocolate, and a crunchy and unexpected touch of m&m’s® in the center. It is prepared all cold, making it very easy to make.

  • 2 cups vanilla cookies, crushed, for the crust
  • 1/2 cups butter, melted, for the crust
  • 1 1/2 cups cream cheese, low-fat, at room temperature, for the vanilla cheesecake
  • 1/2 cups icing sugar, for the vanilla cheesecake
  • 1 tablespoon vanilla essence, for the vanilla cheesecake
  • 1/2 teaspoons lime zest, for the vanilla cheesecake
  • 1/2 cups low-fat sour cream, for the vanilla cheesecake
  • 1 cup m & m's® milk chocolate
  • 1 1/2 cups semisweet chocolate, finely chopped, for the chocolate mousse
  • 1 cup whipping cream, warm, for the chocolate mousse
  • whipped cream, to cover the cake
  • rainbow sprinkles, in the shape of confetti, for decoration

  • In a bowl, mix the crushed cookies with the melted butter; then press the mixture into a round mold of about 25 cm and chill.
  • For the vanilla cheesecake, using a mixer or hand whisk, mix the cream cheese with the powdered sugar, vanilla extract, lemon zest, and sour cream; once you have a homogeneous mixture, pour it over the cookie crust and chill for 1 hour.
  • Spread a layer of milk chocolate m&m’s® over the vanilla cheesecake and set aside.
  • For the chocolate mousse, mix the warm heavy cream and the semisweet chocolate until completely melted; chill in the refrigerator and then whip with a mixer until the chocolate cream is fluffy and creamy.
  • Add the mousse to the mold and chill again for at least 30 minutes.
  • Unmold and cover with whipped cream, decorate with sugar confetti and m&m’s®.
