Madeleines

Madeleines are traditional French small cakes also known as Magdalenas, made with butter that gives them an incredible flavor and soft texture.

  • 5 eggs
  • 1/2 cups sugar
  • 75 grams butter, melted
  • 3/4 cups flour
  • 1 teaspoon baking powder
  • 1 lime zest
  • 1/4 teaspoons vanilla essence

  • Sift the flour with the baking powder. In a bowl, beat the eggs with the sugar until white and fluffy.
  • Add the butter, mixing well. On low speed, incorporate the flour, vanilla, and zest.
  • Cover the bowl and let it rest for one hour.
  • Preheat the oven to 375°F. Grease and flour the madeleine molds.
  • After one hour, mix the batter and spoon it into the molds. They should not be filled completely as they will rise.
  • Bake for 10 to 11 minutes. As soon as you take them out of the oven, remove them from the mold and let them cool on a rack.
