Mamey Ice Cream

  • 1 mamey, large and ripe
  • 1 can evaporated milk
  • 1/2 cups sugar
  • 1 egg

  • Remove the mamey from the skin, cut it into pieces, and place it in the freezer in a resealable bag (this can be done the day before).
  • Put the sugar in the processor or blender and process it until it becomes powdered sugar. Add the egg white and the mamey and blend until everything is incorporated.
  • Add the previous ingredients and the evaporated milk into the ice cream machine.
  • Mix everything in the machine until it reaches an ice cream texture. Refrigerate and serve in small cups.
