Remove the mamey from the skin, cut it into pieces, and place it in the freezer in a resealable bag
(this can be done the day before).
Put the sugar in the processor or blender and process it until it becomes powdered sugar. Add the egg white and the mamey and blend until everything is incorporated.
Add the previous ingredients and the evaporated milk into the ice cream machine.
Mix everything in the machine until it reaches an ice cream texture. Refrigerate and serve in small cups.
