Preparation
Remove the mamey from the skin, break it into pieces and put it in the freezer in a resealable sachet (this can be done the day before).
Put the sugar in the processor or blender and process it to make glass sugar. Add the white and the mamey and beat everything is incorporated.
Add the previous ingredients and the evaporated milk in the ice cream machine.
Mix everything inside the machine until it takes ice cream texture. Refrigerate and serve in small glasses.
