Mango Cheesecake Filled Cake

  • 2 1/2 cups milk, for the cake batter

  • 3 cups mango, fresh, in slices

  • Mix Tres Estrellas® Pancake Flour with milk, egg, sugar, butter, and vanilla; beat until everything is perfectly combined.
  • Pour the batter into three equally sized pre-greased molds, ensuring that each mold has the same amount for even cake layers; bake at 180 °C for 20 minutes.
  • Remove from the oven and let cool.
  • For the cheesecake, using a mixer, blend the cream cheese with powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
  • To assemble the cake, place one layer of cake and spread the cheesecake on top using a piping bag and a spatula; place mango slices on top, add the next layer of cake, and repeat the process. Finally, place the last layer of cake and cover the cake with the remaining cheesecake; freeze for 15 minutes to firm up the cake.
  • Decorate the top of the cake with mango slices and almonds; cover the sides of the cake with toasted and finely chopped almonds.
