Mango Coconut Popsicles

These mango coconut popsicles, in addition to being refreshing, are very healthy and can be enjoyed as a snack, as they contain no added sugar. Pair this recipe as an easy dessert or snack with Nature’s Heart, as their products are from natural, healthy sources and, of course, delicious.

  • 2 cups mango, ataulfo, only pulp, in cubes
  • 2 tablespoons lemon juice, seedless, for the mango mixture
  • 3 tablespoons monk fruit, for the mango mixture
  • 1 cup Nature's Heart® Vanilla Coconut
  • 1/4 cups shredded coconut, for the coconut mixture
  • 1/2 cups Greek coconut yogurt, for the coconut mixture
  • Chia Nature's Heart®

  • For the mango mixture: Blend the mango pulp, lime juice, and monk fruit until fully combined. Set aside until use.
  • For the coconut mixture: Mix the cup of Nature’s Heart® Vanilla Coconut, shredded coconut, and coconut Greek yogurt in a bowl until fully combined.
  • Place a tablespoon of the mango mixture in a popsicle mold, add a tablespoon of the coconut mixture, and repeat alternating layers until finishing with coconut. Add Chía Nature’s Heart® to taste, cover the mold with plastic wrap, and make an opening with the tip of a knife to insert the wooden popsicle sticks. Freeze for at least 2 hours or until the mixture is solid.
  • Remove from the freezer, unmold, and enjoy on your hot afternoons.
