Marbled Brownies with Cheesecake

  • 1/2 cups unsalted butter, cut into pieces
  • 50 grams bittersweet chocolate, chopped into equal pieces
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoons vanilla essence
  • 1 pinch salt
  • 2/3 cups flour
  • 225 grams cream cheese, soft at room temperature
  • 1/3 cups sugar
  • 1 egg yolk
  • 1/4 teaspoons vanilla essence

  • Preheat the oven to 180°C with the baking rack in the middle.
  • Grease a square brownie pan about 20 cm.
  • Heat the butter and chocolate in a saucepan over medium-low heat, stirring occasionally to prevent burning and to melt.
  • Once melted, remove from heat and add 1 cup of sugar, 2 eggs, 1/2 teaspoon of vanilla, and a pinch of salt. Mix well.
  • Add 2/3 cup of flour to the previous mixture and stir everything with a whisk.
  • Place this brownie mixture in the prepared pan.
  • In another bowl, beat the cream cheese with 1/3 cup of sugar, the egg yolk, and 1/4 teaspoon of vanilla extract. Mix well.
  • Place dollops of the cream cheese mixture over the brownie mixture in the pan.
  • With a knife or spatula, swirl to create a marbled effect.
  • Bake until the edges puff up a bit and the center is slightly firm, about 35 minutes.
