Marzipan

Marzipan is a dough made from ground almonds, sugar and eggs that is used in baking.

  • 250 grams almonds, peeled ground
  • 250 grams icing sugar
  • 2 egg whites
  • 2 tablespoons cognac
  • 1 tablespoon lime juice

  • In a deep bowl mix the almonds, sugar, lemon juice and brandy.
  • Gradually add the egg whites to obtain a sticky dough (be careful not to get too wet).
  • Work the dough with your hands to smooth it out and wrap it in plastic.
