Marzipan is a dough made from ground almonds, sugar and egg that is used in baking.

Ingredients

500 portions
  • 250 grams almond, peeled ground
  • 250 grams powdered sugar
  • 2 egg whites
  • 2 tablespoons cognac
  • 1 tablespoon lemon juice

Preparation

In a deep bowl, mix the almonds, sugar, lemon juice and cognac.
From time to time add the egg whites to obtain a sticky mass (careful not to be too wet).
Work the dough with your hands to soften it and wrap it in plastic.

TIPS

The marzipan dough can be stored in the refrigerator for up to 2 months before being used.
