In an electric mixer, beat the egg whites and a pinch of salt on high speed for at least 5 minutes or until stiff peaks form.
Add the sugar tablespoon by tablespoon while continuing to beat until it is fully incorporated.
Prepare two baking trays with parchment paper (you can use a little butter to stick the paper to the tray).
With a spoon, fill a piping bag with a star-shaped nozzle and make the meringues on the trays in the shape of stars or logs.
Bake the meringues for between 1.5 to 2 hours, and remove from the oven when they are dry and crunchy.
While the meringues cool, melt the chocolate in a double boiler. With a spoon, paint chocolate stripes on the meringues, or if you prefer, dip half of a meringue in the chocolate.
Allow the chocolate to harden and serve.
