Meringues with Chocolate

This recipe is the classic meringue recipe with a decoration of dark chocolate.

  • 3 egg whites
  • 3/4 cups sugar
  • 1 pinch salt
  • 150 grams semisweet chocolate

  • Preheat the oven to 100 degrees Celsius.
  • In an electric mixer, beat the egg whites and a pinch of salt on high speed for at least 5 minutes or until stiff peaks form.
  • Add the sugar tablespoon by tablespoon while continuing to beat until it is fully incorporated.
  • Prepare two baking trays with parchment paper (you can use a little butter to stick the paper to the tray).
  • With a spoon, fill a piping bag with a star-shaped nozzle and make the meringues on the trays in the shape of stars or logs.
  • Bake the meringues for between 1.5 to 2 hours, and remove from the oven when they are dry and crunchy.
  • While the meringues cool, melt the chocolate in a double boiler. With a spoon, paint chocolate stripes on the meringues, or if you prefer, dip half of a meringue in the chocolate.
  • Allow the chocolate to harden and serve.
