Preparation
Preheat the oven to 100 degrees Celsius.
In an electric mixer whisk the egg whites and the pinch of salt at a high speed for at least 5 minutes or until they are about to snow.
Add the spoonful sugar in a spoonful while continuing to beat until it has fully incorporated.
Prepare two baking sheets with waxed paper (you can use a little butter to glue the paper to the tray).
With a spoon fill a pastry sleeve with a star-shaped nozzle and make the meringues on the trays in the form of stars or rolls.
Bake the meringues for 1 1/2 to 2 hours, and remove from the oven when they are dry and crispy.
While the meringues cool, melt the chocolate in a bain-marie. Spoon chocolate slices over the meringues with a spoon or if you prefer to dip half meringue in the chocolate.
Allow the chocolate to harden and serve.
