These delicious meringues are perfect to enjoy with family and friends. They have the perfect combination of blackberry and chocolate. They have a crunchy texture on the outside and soft on the inside.
Separate the egg whites from the yolks. Beat the egg whites until fluffy and gradually add the sugar. Let it beat until stiff peaks form.
Add the food coloring and blackberry jelly. Beat until there are no white parts left.
Transfer the mixture to a piping bag and on a silicone mat or parchment paper, shape the meringue roses. Leave a 2 cm space between each rose. Bake at 100°C for 2 hours.
For the ganache: Heat the heavy cream and pour it over the chocolate chips. Let it rest for 3 minutes and then mix until you have a smooth mixture.
Transfer the ganache to a piping bag and place it on one of the baked meringues. Put another meringue on top to form a sandwich. Repeat this process until all the meringues are filled.
