Rose-Shaped Meringues

These delicious meringues are perfect to enjoy with family and friends. They have the perfect combination of blackberry and chocolate. They have a crunchy texture on the outside and soft on the inside.

  • 4 eggs
  • 3/4 cups sugar
  • 3 tablespoons blackberry jelly
  • food coloring
  • 1 cup whipping cream
  • 2 1/2 peanut butter sprinkles

  • Separate the egg whites from the yolks. Beat the egg whites until fluffy and gradually add the sugar. Let it beat until stiff peaks form.
  • Add the food coloring and blackberry jelly. Beat until there are no white parts left.
  • Transfer the mixture to a piping bag and on a silicone mat or parchment paper, shape the meringue roses. Leave a 2 cm space between each rose. Bake at 100°C for 2 hours.
  • For the ganache: Heat the heavy cream and pour it over the chocolate chips. Let it rest for 3 minutes and then mix until you have a smooth mixture.
  • Transfer the ganache to a piping bag and place it on one of the baked meringues. Put another meringue on top to form a sandwich. Repeat this process until all the meringues are filled.
