Pavlova with Red Fruits

  • 4 egg whites, at room temperature
  • 1 pinch salt
  • 250 grams cornstarch, sifted
  • 1 teaspoon vinegar, apple
  • 125 grams raspberries, for the sauce
  • 1 teaspoon lime juice, for the sauce
  • 1/4 cups granulated sugar, for the sauce
  • 1/2 teaspoons brandy, for the sauce
  • 1 cup whipping cream
  • 1/2 cups pomegranate
  • 1/4 cups raspberries
  • 1/4 cups cherries
  • peppermint, to taste

  • Preheat the oven to 120°C.
  • Place parchment paper on a baking tray. Draw a 20cm diameter circle and within it draw one of 13 cm in diameter.
  • Beat the egg whites until soft peaks form.
  • Add the sugar gradually.
  • Add the sifted cornstarch, vanilla, and apple cider vinegar.
  • Transfer the meringue to a piping bag and pipe a circle onto parchment paper.
  • Bake at 120°C for 2 hours.
  • For the raspberry sauce, place all the ingredients in a pot and let it boil for 15 minutes over low heat.
  • Strain the sauce to remove the seeds from the raspberries.
  • Once cooled, place the dessert on a plate and decorate with whipped cream.
  • Pour the raspberry sauce on top and decorate with fruits, add some mint leaves and serve.
