4 egg whites, at room temperature
1 pinch salt
250 grams cornstarch, sifted
1 teaspoon vinegar, apple
125 grams raspberries, for the sauce
1 teaspoon lime juice, for the sauce
1/4 cups granulated sugar, for the sauce
1/2 teaspoons brandy, for the sauce
1 cup whipping cream
1/2 cups pomegranate
1/4 cups raspberries
1/4 cups cherries
peppermint, to taste

Preheat the oven to 120°C.
Place parchment paper on a baking tray. Draw a 20cm diameter circle and within it draw one of 13 cm in diameter.
Beat the egg whites until soft peaks form.
Add the sugar gradually.
Add the sifted cornstarch, vanilla, and apple cider vinegar.
Transfer the meringue to a piping bag and pipe a circle onto parchment paper.
Bake at 120°C for 2 hours.
For the raspberry sauce, place all the ingredients in a pot and let it boil for 15 minutes over low heat.
Strain the sauce to remove the seeds from the raspberries.
Once cooled, place the dessert on a plate and decorate with whipped cream.
Pour the raspberry sauce on top and decorate with fruits, add some mint leaves and serve.
