Pavlova with Red Fruits

The pavlova of red fruits is a delicious dessert, it is a meringue covered with raspberries and cherries with a sweet taste. The recipe of pavlova with red fruits is exquisite, perfect for an elegant dinner.


8 portions
  • 4 egg whites, at room temperature
  • 1 pinch salt
  • 250 grams cornstarch, sifted
  • 1 teaspoon vinegar, of Apple
  • 125 grams raspberry, for the sauce
  • 1 teaspoon lemon juice, for the sauce
  • 1/4 cups refined sugar, for the sauce
  • 1/2 teaspoons brandy, for the sauce
  • 1 cup whipping cream
  • 1/2 cups pomegranate
  • 1/4 cups raspberry
  • 1/4 cups cherry
  • peppermint, to taste


Preheat the oven to 120 ° C.
Place waxed paper on a baking sheet. Draw a circle of 20cm in diameter and draw a 13cm diameter inside.
Beat egg whites until soft peaks form.
Add the sugar little by little.
Add the sifted corn starch, vanilla and apple cider vinegar.
Pass the meringue to a duya and on a waxed paper form a circle with the meringue.
Bake at 120 ° C for 2 hours.
For the raspberry sauce, place all the ingredients in a pot and let it boil for 15 minutes over low heat.
Strain the sauce to remove the seeds of the raspberries.
Once it is cold place the dessert on a plate and decorate with whipped cream.
On top pour the raspberry sauce and decorate with the fruits, add a few leaves of vente and serve.


Serve the pavlova on a cake base.


You can substitute raspberry for any red fruit.
