Napolitan Macarons

Macarons are a very elegant and sophisticated dessert with a delicate almond flavor. In this case, we combine your 3 favorite flavors: strawberry, vanilla, and chocolate to create these delicious Napolitan macarons.

  • 1 egg white
  • 2/3 cups almonds, powdered (75g) sifted
  • 2/3 cups icing sugar, (75g) sifted
  • gel food coloring, pink
  • strawberry essence
  • 1 tablespoon cocoa powder
  • 2/3 cups granulated sugar
  • 18 milliliters water
  • 1 egg white
  • 80 grams whipping cream, hot, for the ganache
  • 1 teaspoon vanilla essence, for the ganache
  • 180 grams white chocolate, for the ganache
  • 1 tablespoon butter, for the ganache

  • Preheat the oven to 145°C.
  • Mix the egg white with the almond powder and powdered sugar and divide into two.
  • To one part, add the pink dye and strawberry essence; to the other part, add the cocoa and mix until homogeneous. Set aside.
  • In a small pot, cook the sugar with the water until it forms a soft caramel.
  • Beat the other egg white at high speed in the mixer until it reaches the soft peak stage. Add the caramel in a thin stream while continuing to beat until you have a firm meringue.
  • Divide the meringue and add half to the strawberry mixture and the other half to the chocolate mixture, folding gently to avoid deflating the meringue, achieving a homogeneous and consistent texture. Place each mixture in a piping bag with a plain tip.
  • Shape the macarons to 4 cm in diameter on a baking sheet lined with parchment paper, leaving about 1.5 cm of space between them, tap the baking sheet to remove air bubbles, and let dry for about 30 minutes.
  • Bake for 11 minutes, let cool, and set aside.
  • For the filling, pour the hot heavy cream over the white chocolate, butter, and vanilla essence. Mix until combined and refrigerate for 30 minutes.
  • Whip the white chocolate mixture at medium speed for 5 minutes until it doubles in volume.
  • Place in a pastry bag with a plain tip and spread a little on a strawberry macaron, cover with a chocolate one, pressing lightly. Repeat with the rest and serve.
