Macarons are a very elegant and sophisticated dessert with a delicate almond flavor. In this case, we combine your 3 favorite flavors: strawberry, vanilla, and chocolate to create these delicious Napolitan macarons.
Mix the egg white with the almond powder and powdered sugar and divide into two.
To one part, add the pink dye and strawberry essence; to the other part, add the cocoa and mix until homogeneous. Set aside.
In a small pot, cook the sugar with the water until it forms a soft caramel.
Beat the other egg white at high speed in the mixer until it reaches the soft peak stage. Add the caramel in a thin stream while continuing to beat until you have a firm meringue.
Divide the meringue and add half to the strawberry mixture and the other half to the chocolate mixture, folding gently to avoid deflating the meringue, achieving a homogeneous and consistent texture. Place each mixture in a piping bag with a plain tip.
Shape the macarons to 4 cm in diameter on a baking sheet lined with parchment paper, leaving about 1.5 cm of space between them, tap the baking sheet to remove air bubbles, and let dry for about 30 minutes.
Bake for 11 minutes, let cool, and set aside.
For the filling, pour the hot heavy cream over the white chocolate, butter, and vanilla essence. Mix until combined and refrigerate for 30 minutes.
Whip the white chocolate mixture at medium speed for 5 minutes until it doubles in volume.
Place in a pastry bag with a plain tip and spread a little on a strawberry macaron, cover with a chocolate one, pressing lightly. Repeat with the rest and serve.
