Pink meringues for giving

  • 240 grams San Juan® Egg Whites
  • 240 grams granulated sugar
  • 240 grams icing sugar, sifted
  • pink dye
  • 1 tablespoon cream of tartar
  • 1 tablespoon almond essence
  • 1 cup cream cheese
  • 1 cup whipping cream
  • 1/2 cups white chocolate, melted
  • 1/2 cups icing sugar
  • pink dye
  • edible pearls, in pastel colors

  • Beat the egg whites San Juan® for 5 minutes or until they double in size and are semi-firm. Add the granulated sugar, food coloring, cream of tartar, and almond extract. Beat for 8 to 10 minutes or until the egg whites San Juan® are firm and when you turn the bowl upside down, they do not fall out.
  • Remove the bowl from the mixer, gradually add the powdered sugar, and fold in gently with a spatula, but be careful not to lose air in the egg whites San Juan®. Place the meringue in a piping bag with a star tip.
  • Form stars on a baking sheet lined with parchment paper, while you should form the strips on another baking sheet.
  • Bake the meringues at 90 °C for 90 minutes or until completely dry.
  • For the filling of the stars: mix the cream cheese until smooth, then add the whipping cream, chocolate, sugar, and food coloring. Combine, place in a piping bag, and refrigerate.
  • Add a bit of filling to the star meringues and cover with another meringue. Sprinkle with edible pearls.
  • Serve the meringues or package them to give away.
