Pour the milks and essence into a pot and place over low heat.
Remove from heat and add the egg yolks.
Pour into small cups or glasses.
Let it cool.
Make a syrup with the sugar and pisco.
Bring to a simmer until it reaches the right consistency.
Whip the egg whites until stiff peaks form and add the syrup until it cools.
Decorate the glasses with this meringue and sprinkle with ground cinnamon.
