Mil Hojas Filled with Pastry Cream

  • 5 San Juan® eggs, for the pastry cream
  • 3/4 cups sugar, for the pastry cream
  • 50 grams cornstarch, for the pastry cream
  • 2 cups cow's milk, for the pastry cream
  • 1 vanilla bean, for the pastry cream
  • flour, for rolling out
  • 500 grams puff pastry
  • 1 cup almonds, sliced and toasted
  • 2 1/2 cups icing sugar, for the glaze
  • 5 tablespoons water, for the glaze
  • 150 grams bittersweet chocolate, melted

  • Preheat the oven to 200 °C.
  • Separate the egg yolks of Huevo San Juan® from the whites.
  • For the pastry cream, in a bowl beat the egg yolks with the sugar and cornstarch. Set aside.
  • In a saucepan, heat the milk with the vanilla over medium heat, without letting it boil.
  • In another bowl, pour in the egg yolks, add hot milk, and beat at medium speed. Return the egg yolk mixture to the pot with hot milk and, while continuing to beat, let it cook for 5 minutes, or until you have a semi-thick texture. Remove from heat, let cool, and refrigerate for 2 hours.
  • On a floured surface, roll out the puff pastry with a rolling pin until it is approximately 3 mm thick. Cut out 4 squares of 20 cm x 20 cm.
  • Place the squares of puff pastry on a baking sheet lined with parchment paper. Bake for about 20 minutes with another baking sheet on top to prevent the pastry from rising. Remove from the oven and let cool.
  • With the help of a spatula, spread the pastry cream over a sheet of puff pastry, place the almonds on top, add another sheet of puff pastry, and repeat the process. Finish with a layer of puff pastry.
  • For the glaze, in a bowl mix the powdered sugar with the water until you achieve a thick consistency.
  • Pour the glaze over the last layer of puff pastry, add lines of melted chocolate, and using a toothpick, pull in one direction and then the other.
  • Enjoy with a cup of tea.
