1 cup chocolate cookies, crushed, for the base
1/4 cups butter, melted, for the base
226 grams cream cheese
1/4 cups sugar
2 eggs
4 tablespoons sour cream
3 tablespoons flour
1 teaspoon salt
150 grams bittersweet chocolate
1 cup whipping cream, for the frosting
1/2 cups icing sugar, for the frosting
190 grams cream cheese, for the frosting
maraschino cherries, for decorating
chocolate shavings, for decorating

Preheat the oven to 180°C.
Mix the chocolate cookies with the butter. Set aside.
Beat the cream cheese with the sugar, eggs, cream, flour, salt, and dark chocolate.
Place the cookie base in cupcake liners and press to compact.
Pour the cheesecake into the cupcake liners, filling them ¾ of the way full, bake for 30 min. Let cool and refrigerate for at least 1 hour.
Whip the heavy cream with the powdered sugar until it doubles in volume, place it in a piping bag with a tip.
Decorate the mini cheesecakes with cream, cherries, melted chocolate, and chocolate shavings.
