Preheat the oven to 180°C. Mix the chocolate cookies with the butter. Set aside. Beat the cream cheese with the sugar, eggs, cream, flour, salt, and dark chocolate. Place the cookie base in cupcake liners and press to compact. Pour the cheesecake into the cupcake liners, filling them ¾ of the way full, bake for 30 min. Let cool and refrigerate for at least 1 hour. Whip the heavy cream with the powdered sugar until it doubles in volume, place it in a piping bag with a tip. Decorate the mini cheesecakes with cream, cherries, melted chocolate, and chocolate shavings.
