Cajeta-Filled Muffins

  • 200 grams butter, butter
  • 100 grams artificial sweetener
  • 85 grams glucose syrup
  • 110 grams honey
  • 1 tablespoon vanilla essence
  • 3 eggs
  • 120 milliliters whipping cream
  • 450 grams whole-wheat flour
  • 6 grams baking powder
  • 40 grams cornstarch
  • 1 tablespoon salt
  • 12 tablespoons cajeta

  • Beat the butter together with the sugar. Add the glucose, honey, vanilla, and eggs. Beat until well combined and then add the cream.
  • Sift and mix the flour together with the baking powder, cornstarch, and salt. Incorporate into the butter mixture and mix.
  • Place 1/3 of the mixture in muffin molds. Fill with cajeta and cover with more batter. Bake in a preheated oven at 170°C for 15 minutes.
