Capuccino Muffin

  • 1/3 cups instant coffee
  • 2 tablespoons water
  • 1 box flour , for yellow cake
  • 1 1/4 cups cow's milk
  • 1/3 cups vegetable oil
  • 3 eggs
  • 1 tablespoon cocoa powder
  • 1 tablespoon vanilla essence
  • whipping cream
  • cinnamon, ground

  • Preheat the oven to 250ºC.
  • Place the cupcake liners in a special muffin pan.
  • In a small bowl, mix the coffee and water, set aside.
  • In a large bowl, mix the cake flour, milk, oil, eggs, and half of the coffee mixture, beating everything very well; reserve one cup of this mixture.
  • Fill the molds halfway.
  • To the remaining coffee mixture, add the cocoa and mix until combined.
  • Add a tablespoon to each muffin and stir with a toothpick to create a marbled effect, then bake for 25 minutes or until the center is firm.
  • Whip the cream with the vanilla until you achieve a meringue-like consistency.
  • Remove from the oven and let them cool; then decorate with the cream, sprinkle with cinnamon, and serve.
