  • 160 milliliters vegetable oil
  • 1 teaspoon vanilla essence
  • 450 grams carrot
  • 150 grams raisins
  • 330 grams flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 200 grams white chocolate

  • In a bowl, beat the eggs, oil, and vanilla essence.
  • In another bowl, sift flour along with baking powder and cinnamon.
  • Incorporate the processed carrots and raisins into the egg mixture.
  • Add the dry ingredients to the mixture.
  • Place the mixture into muffin molds and bake in a moderate oven at 170ºC for approximately 20 minutes. Remove from the oven and let cool before serving.
