Preparation
In a bowl beat the eggs, oil and vanilla essence.
In another bowl sift flour together with the baking powder and cinnamon.
Add the processed carrots and raisins to the egg mixture.
Place the dry ingredients in the preparation.
Place the mixture in muffin molds and cook in a moderate oven at 170ºC for approximately 20 minutes. Remove from the oven and let cool to serve.
