Carrot Muffins with Oats and Yogurt

  • 1 1/2 cups Great Value® wheat flour
  • 1 cup oats
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoons Great Value® plain salt
  • 2 eggs
  • 3/4 cups Extra Special® Greek-style yogurt with honey
  • 1/2 cups Great Value® Sugar
  • 1/4 cups Great Value® whole milk
  • 2 teaspoons vanilla essence
  • 1 cup carrot, grated

  • Preheat the oven to 180°C.
  • In a bowl, combine the flour with the oats, baking powder, baking soda, cinnamon, and salt. Set aside.
  • Beat the eggs until they double in size and add the Extra Special® Greek Style Yogurt with Honey and the Sugar.
  • While continuing to beat, add the milk, vanilla, and carrots. Finally, gradually add the dry ingredients and keep beating until fully combined.
  • Pour the mixture into a cupcake mold with liners or previously greased and floured.
