Chameleon Muffins

  • 3 eggs, (separate egg yolks from the whites)
  • 3/4 cups sugar
  • 1/4 cups vegetable oil
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1 1/4 cups flour
  • 1/2 cups yogurt
  • ginger, owder, turmeric, nutmeg or cinnamon
  • walnuts, almonds, chocolate chips, blueberries, etc. (optional)

  • Preheat the oven to 180ºC.
  • In a bowl, put the 3 egg yolks along with the sugar and beat until the mixture is frothy and almost white (with the mixer).
  • Add the oil and beat with the help of a spatula.
  • Once the oil is integrated, fold in the yogurt gently.
  • Add the vanilla extract (it can be swapped for another flavor) and the baking powder.
  • Add pre-sifted flour, little by little, until fully incorporated with gentle folding motions.
  • In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually incorporate this into what you had previously beaten, using gentle folding motions. If you chose to stir in any extra ingredient into the mixture, do it very carefully.
  • Place in cupcake liners until filling 3/4 of their capacity. If you decided to add some nuts or dried fruits as a topping, this is the right moment to do so.
  • Bake for 25 minutes or until a toothpick inserted comes out clean and they have a golden color.
  • Decorate if you wish with some frosting.
