Muffins with a moist consistency and a delicious taste that adapt to your tastes, is a versatile recipe that allows you to create many versions, it is so simple that you will not get tired of doing it again and again. Kids love it. Besides that the ingredients are super easy to get, it's more likely you have them right now. Really, you will not regret it.

  • 3 eggs, (separate yolks from the whites)
  • 3/4 cups sugar
  • 1/4 cups oil
  • 1 teaspoon liquid vanilla
  • 1 teaspoon baking soda
  • 1 1/4 cups flour
  • 1/2 cups yogurt
  • ginger, powder, turmeric, nutmeg or cinnamon
  • walnuts, almonds, chocolate chips, blueberries, etc. (optional)


Preheat the oven to 180ºC.
In a bowl put the 3 yolks together with the sugar and beat until the mixture is frothy and almost white (with the blender ).
Add the oil and beat with the help of a spatula.
Since the oil is integrated, incorporate the yoghurt with enveloping movements.
Add vanilla extract (can be changed with some other flavor) and baking powder.
Add previously sifted flour, little by little until integrating with enveloping movements.
In a bowl on the side whisk the whites with the pinch of salt. And incorporate this last little by little to what we already had previously beaten with enveloping movements. If you chose to stir some extra ingredient in the mixture, do it very carefully.
Put in capacillos until filling 3/4 parts of its capacity. If you decided to put as a topping some nuts, or nuts this is the right time to do it.
Bake for 25 minutes or until a toothpick comes out clean and golden brown.
Decorate if you wish with some bitumen.


You can choose to sprinkle them with icing sugar once cold, or even some bitumen. At home we prefer them natural.
