White Chocolate and Cherry Muffins

If sweetening your day is your plan for today, these muffins will surely do the trick. With every bite, you will find a soft piece of white chocolate or an explosion of flavor from a fresh cherry.

  • 250 grams flour
  • 100 milliliters cow's milk
  • 220 grams sugar
  • 110 grams unsalted butter
  • 2 eggs
  • 1 teaspoon baking powder
  • 60 grams white chocolate
  • 15 maraschino cherries
  • 1 teaspoon vanilla essence
  • food coloring, pink
  • 50 milliliters syrup, of cherries
  • vegetable oil, or cooking spray

  • Preheat the oven to 180º C.
  • Place the butter and sugar in a deep bowl and mix with a mixer until a paste is formed.
  • Add the eggs, milk, baking powder, vanilla, and sifted flour. Beat at medium speed until all ingredients are perfectly combined.
  • Incorporate the syrup and 10 drops of food coloring (the amount may vary depending on the intensity of the color you want to achieve) and beat until the color is uniform.
  • Chop the cherries and chocolate into approximately half-centimeter pieces. Add to the mixture and stir with a spoon.
  • Place the cupcake liners in a muffin tin and spray with cooking spray.
  • Fill each cupcake liner with the mixture three-quarters full, being careful not to stain the outside of the paper.
  • Bake for about 25 minutes, make sure they are well cooked by inserting a toothpick or knife into one of the muffins; if it comes out clean, it's time to take them out of the oven.
