This muffin is a bit different with a deeper flavor and a fun twist, perfect for gatherings with friends accompanied by good ice cream! Or also with a nice tea.
In a bowl, mix the dry ingredients: flour, cocoa powder, white and brown sugar, baking powder, salt, and baking soda until well combined.
In another bowl, mix the liquid ingredients: first beat the eggs lightly, then add the vanilla, milk, and melted butter, mixing until well incorporated.
In the bowl with the dry ingredients, make a well in the center and pour in the liquid mixture. Gently fold it in, being careful not to overmix; just enough to combine both mixtures.
Next, add the chocolate chips and fold them in without overmixing.
Once the batter is ready, pour it into the muffin tray, placing two tablespoons in each paper cup (approximately 2/3 of their capacity).
Then, place it in the preheated oven at 190 degrees and bake for about 20-25 minutes or until a toothpick inserted comes out clean.
For the coffee frosting
With a mixer on medium speed, cream the butter, then add white sugar until a good consistency is achieved. Add the 2 cheeses and continue mixing. Finally, add the amount of coffee you desire, a splash of vanilla extract, and you’re done.
