Dark Chocolate Muffin

This muffin is a bit different with a deeper flavor and a fun twist, perfect for gatherings with friends accompanied by good ice cream! Or also with a nice tea.

  • 175 grams flour
  • 4 tablets bittersweet chocolate
  • 1 teaspoon baking soda
  • 150 grams sugar
  • 90 grams unsalted butter
  • 2 cups cow's milk
  • 1 pinch salt
  • 2 eggs
  • 50 grams brown sugar
  • 1 tablespoon vanilla essence
  • 50 grams cocoa powder

  • 2 sticks cream cheese
  • 1/2 cups coffee
  • 1 teaspoon vanilla essence

  • Preheat the oven to 190ºC.
  • In a bowl, mix the dry ingredients: flour, cocoa powder, white and brown sugar, baking powder, salt, and baking soda until well combined.
  • In another bowl, mix the liquid ingredients: first beat the eggs lightly, then add the vanilla, milk, and melted butter, mixing until well incorporated.
  • In the bowl with the dry ingredients, make a well in the center and pour in the liquid mixture. Gently fold it in, being careful not to overmix; just enough to combine both mixtures.
  • Next, add the chocolate chips and fold them in without overmixing. Once the batter is ready, pour it into the muffin tray, placing two tablespoons in each paper cup (approximately 2/3 of their capacity). Then, place it in the preheated oven at 190 degrees and bake for about 20-25 minutes or until a toothpick inserted comes out clean.
  • For the coffee frosting With a mixer on medium speed, cream the butter, then add white sugar until a good consistency is achieved. Add the 2 cheeses and continue mixing. Finally, add the amount of coffee you desire, a splash of vanilla extract, and you’re done.
