Ingredients

10 portions
  • 175 grams flour
  • 4 tablets bitter chocolate
  • 1 teaspoon baking soda
  • 150 grams sugar
  • 90 grams unsalted butter
  • 2 cups milk
  • 1 pinch salt
  • 2 eggs
  • 50 grams brown sugar
  • 1 tablespoon liquid vanilla
  • 50 grams cocoa powder
  • chocolate chips
  • 2 sticks cream cheese
  • 1/2 cups coffee
  • 1 teaspoon liquid vanilla

Preparation

Preheat the oven to 190ºC.
In a bowl, mix the dry ingredients, the flour, the cocoa powder, the white and brown sugar, the yeast, the salt and the sodium bicarbonate until they are well bound.
In another bowl mix the liquid ingredients, first the eggs, beat them lightly, then add the vanilla, milk, and melted butter, mix everything until they are well integrated.
In the bowl where we have the dry ingredients we make a hole in the center and deposit the liquid mass, we integrate it gently with care, we do not have to beat it in excess, just enough so that both mixtures are integrated.
Next we add the pieces of chocolate and we integrate it again but without beating excessively. Once we have our dough completed, we leave it in our tray of muffins, and we are putting two tablespoons in each paper capsule (approximately 2/3 of its capacity). Then we introduce it in the oven, previously preheated to 190 degrees, and let it bake about 20-25 minutes or until we puncture and see that the needle is clean.
For the coffee bitumen With a blender at medium speed add the butter followed by put white sugar until you get a good consistency, put the 2 cheeses and continue beating finally put the amount of coffee you want, a splash of vanilla extract and ready.

PRESENTATION

With a pastry bag or as you wish to place the bitumen, put a few pieces of chocolate can accompany it with vanilla ice cream is very good.

TIPS

Wait until the muffins are completely cold to put the bitumen on it. If we do not wait, it could take a not very pleasant consistency.
