Easy Muffins

Inspired by carrot cakes with surprising and original changes, I did my tests and everyone who tried them asked for more. Of course, I used GAMESA flour for traditional pancakes.

  • 140 grams Gamesa® pancake mix
  • 1/2 tablespoons baking soda
  • 1 teaspoon cinnamon
  • 2 eggs
  • 60 grams sugar
  • 80 milliliters canola oil, soy or sunflower
  • 40 milliliters vegetable oil, of grape
  • 150 grams carrot, peeled
  • 140 grams green apple, peeled
  • 5 pecans, peeled and chopped
  • 60 grams cranberries
  • 100 grams carrot, peeled and grated
  • 50 grams granulated sugar

  • Grease the molds and prepare them.
  • Preheat the oven to 190 degrees Celsius.
  • Sift the GAMESA flour with the cinnamon and baking soda and set aside. Grate the carrot and apple, place them in a bowl, and set aside as well. In another bowl, whisk the eggs with the sugar and oil using a spatula, then incorporate the flour and the apples with the grated carrots, mixing well with the spatula. Then add the floured walnuts and blueberries so they don't sink to the bottom, and fill the molds. Bake for 20 to 22 minutes, making sure they don't burn.
  • Remove from the oven and let cool.
  • Meanwhile, prepare a simple jam with the carrots and extra sugar. Place a saucepan over low heat on the stove, and with sugar and water covering the sugar and carrots, cook it quickly. Set aside and let cool.
  • With the help of a non-stick skillet, place two tablespoons of isomal sugar and heat over low flame until it melts. Once it's loose, turn off the heat, stir with a metal spoon, and on a silicone mat or parchment paper, form the decorative shape. Let it cool without touching it, as it can burn your fingers.
  • Remove the cold muffins from the molds and decorate them with the carrot jam and the isomal sugar figure, and serve.
