Ingredients

  • 1/2 tablespoons baking soda
  • 1 teaspoon cinnamon
  • 2 eggs
  • 60 grams sugar
  • 80 milliliters canola oil, soybeans or sunflower
  • 40 milliliters oil, from grape
  • 150 grams carrot, peeled
  • 140 grams green apple, peeled
  • 5 pecans , peeled and chopped
  • 60 grams cranberry
  • 100 grams carrot, peeled and grated
  • 50 grams granulated sugar
  • sugar, (asomal or isomala)

Preparation

Mold the molds and leave them ready.
Turn on the oven at 190 degrees Celsius.
Sift the GAMESA flour with the cinnamon and the baking soda and reserve. We slice the carrot and the apple, place in a bowl and reserve also. In another bowl, beat the eggs with the sugar and oil with a spatula and add the flour and the apples with the grated carrots mixed with the spatula, well then add the walnuts and floured blueberries, so they do not go to the bottom and fill the molds, bake for 20 or 22 minutes taking care not to burn.
Remove from the oven and let cool.
Meanwhile, we prepare a simple marmalade with carrots and extra sugar, place a saucepan over a fire on the stove and with sugar and water covering the sugar and carrots, cook it too quickly, reserve and cool.
With the help of a skillet, with anti-stick, place two tablespoons of isomal sugar and put on low heat, melt, when it is loose, turn off the fire moves with a metal spoon and on a silicone mat or on butter paper, the decorative figure is made, it is left to cool, it is not touched, it is possible to burn the fingers.
They are removed from the molds, cold muffins and decorated with carrot jam and the figure of isomal sugar, are offered.
